Ingredients

24 each sea scallops
1 x onions green, small bundle
1 x pineapple, canned chunks, drained, save liquid for marinade
1 x skewers bamboo, soaked in water, or metal
1 x lemon minced zest, and its juice
1 x pineapple juice, saved from above
2 tablespoons black pepper freshly cracked
1/4 cup vegetable oil olive, extra virgin
1 tablespoon garlic minced
1 teaspoon salt

Directions

Skewer kabobs scallops, pineapple then the onion three times per skewer. Repeat until product is gone.  Grill on medium heat until scallops are done to desired doneness and pineapple is defrosted.

Lemon Pepper Marinade: Mix all ingredients of marinade and marinate scallops for 1 hour before cooking. Then assemble kabobs as above.
