The flavor is hard to describe until you’ve had one: warm caramelized dates bound with butter and sugar, studded with toasted nuts, lightened with crispy rice cereal, and rolled in shredded coconut for a snowy finish.
The cooking method is the part nobody expects. You actually cook the egg-and-date mixture briefly in a skillet, tempering hot syrup into beaten eggs first so they don’t scramble. That cooked-egg step gives humdingers their signature chewy-but-stable texture, somewhere between a no-bake cookie and a softer date ball.
Pro Tips
- Temper carefully. Drizzle hot date mixture into the eggs in a thin stream while whisking, otherwise you’ll end up with sweet scrambled eggs.
- Roll while the mixture is warm but not skillet-hot. Cool too much and the balls won’t hold their shape; too hot and you’ll burn your hands.
- Use Medjool dates pitted and chopped if you can find them. Smaller deglet noor dates work but you’ll need to chop them more finely.

Melt butter and sugar in a skillet, stirring for 2 minutes.
Add chopped dates.
Set aside. In a small bowl, beat 2 eggs and milk. Slowly add a small amount of hot mixture to eggs and milk. Pour entire egg mixture into skillet. Cook mixture 2 minutes, stirring constantly. Add nuts, vanilla, and cereal. Roll small amount, about 1 large heaping tablespoon, into a ball (be careful, it will be hot) and then roll ball in coconut. This freezes well.
