This is the kind of big-batch casserole that solved dinner three times over. Ground beef and bacon cooked in the same pan, onion sauteed in the bacon drippings, then everything mixed with noodles, cream of mushroom soup, canned peas and mushrooms, and a full pound of cubed soft cheese that melts through the whole thing.

The recipe even tells you how to portion it: divide into three smaller casserole dishes and freeze two of them for later. That’s real weeknight thinking.

Feeds a crowd straight from the pot or fills the freezer for nights when you have nothing.

Kitchen Tips

  • Saute the onion in the bacon drippings rather than fresh oil. That’s where the flavor difference is.
  • The peas go in with their liquid, which adds body to the sauce and keeps the casserole from drying out.
  • Cool to room temperature before freezing, and defrost in the fridge overnight before reheating.
