Ladyfingers line the edges and top of a springform pan while a fluffy filling of sweetened condensed milk, lemon juice, crushed pineapple, marshmallows, and whipped topping fills the center. Six hours in the fridge sets it into a sliceable, creamy dessert.
The lemon juice reacts with the condensed milk and thickens it without any heat. This same chemistry is what makes Key lime pie work. The acid in the lemon causes the milk proteins to tighten up, giving the filling enough body to hold its shape when sliced.
Mini marshmallows soften as they sit in the filling, becoming chewy, pillowy pockets throughout the cake. They add texture that whipped topping alone can’t provide.
Standing the split ladyfingers around the edge of the pan creates a wall that looks impressive when you release the springform ring. Pour the filling carefully so you don’t knock them over.

Directions
In a mixing bowl, combine sweetened condensed milk, lemon juice, and marshmallows.
Mix until well blended. Fold in whipped topping.
Stand ladyfingers around edge of 9 inch springfrom pan.
Carefully pour filling into pan, so as not to disturb lady fingers.
Cover top with remaining lady fingers.
Chill 6 hours or overnight.
