| 1 | litre | meat broth | |
| 1 | cup | semolina | |
| 1 | each | egg | |
| 1 | x | parsley sprigs | chopped |
| 1 | x | chives | |
| 3 1/2 | tablespoon | butter | |
| 1 | x | salt | to taste |
| 1 | x | black pepper | to taste |
| 1 | x | nutmeg | ground, to taste |
Slowly stir the semolina into the boiling broth and cook for 1 hour.
Shortly before serving, stir in a beaten egg, adjust seasoning with salt, pepper, and nutmeg.
Add the chopped parsley or chives, and dot with butter.

Maybe I did something wrong, but the pasta did not cook. It turned mushy. Otherwise the flavor was very good. I think next time I'll cook the pasta first.
