This no-bake layered banana dessert is a retro icebox classic that chills overnight into a sliceable, creamy dream. A baked graham cracker crust gets topped with a fluffy whipped layer of butter, powdered sugar, and vanilla, then layered with lengthwise-cut bananas, crushed pineapple, and a thick blanket of whipped topping.

The whipped butter and powdered sugar layer is the secret weapon. It sets up firm in the fridge and acts almost like a no-bake cheesecake filling, holding everything together so you get clean slices instead of a sloppy pile. Beat it until it’s really light and fluffy for the smoothest texture.

Cutting the bananas lengthwise instead of into rounds gives you full coverage across the pan with fewer gaps. The crushed pineapple on top keeps the banana layer moist and adds a tropical tang that balances all the sweetness.

This needs a full overnight chill. The layers need time to meld and the crust needs to firm up. Don’t try to rush it.

Pro Tips

  • Drain the crushed pineapple thoroughly, pressing out excess juice. Too much liquid will make the layers slide apart.
  • Choose bananas that are ripe but still firm. Overripe bananas will turn brown and mushy overnight.
  • Toss banana slices in a little lemon juice to slow browning if you’re worried about color.
  • Slice with a sharp knife dipped in hot water for the cleanest cuts.

Variations

  • Add a layer of sliced strawberries alongside the bananas for a tropical-berry twist.
  • Sprinkle toasted coconut flakes between layers for extra texture.
  • Use chocolate graham crackers for the crust for a chocolate-banana combination.
