| 1 | pound | pinto beans | |
| 1 | large | white onion | |
| 5 | fresh | tomatoes | chopped, peeled, seeded |
| 1 | pound | bacon | cut into squares |
| 1 | tablespoon | mexican oregano | |
| 1 | tablespoon | cumin | ground |
| 12 | ounces | beer | |
| 1 | bunch | cilantro | chopped |
| 1 | x | jalapeno peppers | seeded, cut up |
In a large pot, put the beans, bacon, oregano and cumin.
Add the beer, and water.
Simmer until the beans are almost tender (maybe 1 - 1 1/2 hours).
Add the tomatoes and jalapenos, and cook until beans are fully tender.
Add the cilantro, and re-heat for about a half hour.
Salt to taste.
These make a good basic bean.
If you want a bean soup, remove about a quarter of the beans, and mash with a potato masher.
Return to the pot.

The one dish that defines Thanksgiving and the fact that the famous holiday warms your heart and your soul is dessert....
Excellent, the flesh simply falls off the bone, unbelievably tender and the dry spice rub makes for a crispy very tasty skin. One of the best roast chicken I have ever made.
