| 4 | each | salmon fillets | 1 inch thick |
| 1 | tablespoon | canola oil | |
| 1 | teaspoon | cajun seasoning | to taste |
| 4 | cups | french fries | spiral cut |
Position racks to divide oven into 3rds. Preheat to 475 degrees.
Line 2 jelly-roll pans with foil (for easy clean-up)
Brush both sides of fish with oil; arrange in 1 of the prepared pans and sprinkle tops with Cajun seasoning.
Spread seasoned fries in other pan.
Bake salmon on upper oven rack, french fries on lower rack, 12-15 minutes.

This was FANTASTIC!! I am not a huge fan of eggplant, but I recently tried baba ganoush at a restaurant. I really, really liked it so I had to find a recipe to try at home. This was a huge success. Very easy recipe to make and very, very tasty!!
