The lemon ice cream and orange sherbet together create a bright citrus base, and the brandy adds a warm, smooth kick underneath. Since sherbet has less fat than ice cream, it keeps the texture lighter and more refreshing than an all-ice-cream version would be.
Soften both the ice cream and sherbet for a few minutes before blending. Rock-hard frozen scoops will either stall your blender or leave icy chunks. You want them slightly soft so they blend into a smooth, spoonable consistency.
Pour into a chilled glass and drink immediately. This melts fast.
