Ingredients

1 each pizza crust 12-inch
8 ounces mozzarella cheese shredded
4 ounces monterey jack cheese shredded
8 ounces tomatoes thinly sliced, ripe
4 each shrimp split and tossed in 1/4 c chile rub
2 tablespoons scallions, spring or green onions green tops, thinly sliced
1 teaspoon gremolata
2 teaspoons garlic finely
1 tablespoon chili powder
1 x lime juice
1/2 cup olive oil
1 tablespoon cilantro finely chopped
1 x salt and black pepper to taste
2 tablespoons lime zest finely
2 tablespoons garlic finely
1 cup cilantro finely

Directions

Prepare Chile Rub: Combine all rub ingredients in a small mixing bowl 3/4 cup (enough for 12 large split shrimp).

Prepare Texas Gremolata: Combine all gremolata ingredients in a small mixing bowl.

Use on top of pizzas, chile, pastas, or BBQ meats.

Assemble Pizza: Make up by layering the ingredients in order listed.

Bake at 425'F for 15-20 minutes, or until crust is nicely browned.

This recipe is excellent!! Your sister has good taste. I know recipes are passed along all the time without knowing the origin, however I do know where this one originated. This recipe comes from Betty Crocker cookbook copyright 1969. My son now 28 and I made this recipe all the time while he was growing up. A wonderful recipe to do with children.
