| 8 | ounces | mozzarella cheese | shredded |
| 4 | ounces | monterey jack cheese | shredded |
| 8 | ounces | tomatoes | thinly sliced, ripe |
| 4 | each | shrimp | split and tossed in 1/4 c chile rub |
| 2 | tablespoons | scallions, spring or green onions | green tops, thinly sliced |
| 1 | teaspoon | gremolata | |
| 2 | teaspoons | garlic | finely |
| 1 | tablespoon | chili powder | |
| 1 | x | lime juice | |
| 1/2 | cup | olive oil | |
| 1 | tablespoon | cilantro | finely chopped |
| 1 | x | salt and black pepper | to taste |
| 2 | tablespoons | lime zest | finely |
| 2 | tablespoons | garlic | finely |
| 1 | cup | cilantro | finely |
Prepare Chile Rub: Combine all rub ingredients in a small mixing bowl 3/4 cup (enough for 12 large split shrimp).
Prepare Texas Gremolata: Combine all gremolata ingredients in a small mixing bowl.
Use on top of pizzas, chile, pastas, or BBQ meats.
Assemble Pizza: Make up by layering the ingredients in order listed.
Bake at 425'F for 15-20 minutes, or until crust is nicely browned.

Have you ever patronized a restaurant that doesn't have salt and pepper on the table? The assumption is that the food is already properly seasoned...
This recipe is excellent!! Your sister has good taste. I know recipes are passed along all the time without knowing the origin, however I do know where this one originated. This recipe comes from Betty Crocker cookbook copyright 1969. My son now 28 and I made this recipe all the time while he was growing up. A wonderful recipe to do with children.
