Ingredients

4 pounds caribou
2 pounds pork lean
1 large onion chopped
2 pounds potatoes grated
2 tablespoons salt
1/2 teaspoon black pepper
1 teaspoon allspice
1/2 teaspoon cayenne pepper and other spices, to taste
1 x sausage casing

Directions

Grind together all the meats with the onion.

Next mix the potatoes with the meats.

Add spices and mix thoroughly.

Prepare as with Caribou Sausage #1.
