| 2 | cups | onion, yellow | chopped |
| 1 | cup | scallions, spring or green onions | chopped |
| 1 | cup | green bell pepper | chopped |
| 1/2 | teaspoon | garlic | minced |
| 1/4 | teaspoon | cayenne pepper | red |
| 3/4 | teaspoon | black pepper | ground |
| 1/2 | teaspoon | salt | |
| 1/4 | teaspoon | oregano | |
| 1/4 | teasppon | garlic powder | |
| 1 | tablespoon | worcestershire sauce | |
| 3 | dash | red hot pepper sauce (eg. Tabasco) | |
| 6 | ounces | tomato paste | |
| 1/4 | teaspoon | thyme | |
| 1 | teaspoon | celery flakes | |
| 6 | cups | rice, brown | cooked |
Wash beans and then soak for 12 hours.
Drain water.
Fill a large pot with beans; add water to 1/2 inch above beans level.
Add remaining ingredients except rice; cook over low heat 2 to 2 1/2 hours, covered.
Serve over cooked brown rice.

This is a delicious recipe! I made it with pork chops instead of stew meat and used Swanson's canned chicken broth instead of water and used fresh garlic instead of garlic powder. It was absolutely delicious. The longer it cooks (on low heat), the better it tastes. I let it cooks for 2 hours and it was fabulous. Thank you for this recipe!
