Cajun-Style Red Beans and Brown Rice

Ingredients

1 pound pinto beans dried
2 cups onion, yellow chopped
1 cup scallions, spring or green onions chopped
1 cup green bell pepper chopped
1/2 teaspoon garlic minced
1/4 teaspoon cayenne pepper red
3/4 teaspoon black pepper ground
1/2 teaspoon salt
1/4 teaspoon oregano
1/4 teasppon garlic powder
1 tablespoon worcestershire sauce
3 dash red hot pepper sauce (eg. Tabasco)
6 ounces tomato paste
1/4 teaspoon thyme
1 teaspoon celery flakes
6 cups rice, brown cooked

Directions

Wash beans and then soak for 12 hours.

Drain water.

Fill a large pot with beans; add water to 1/2 inch above beans level.

Add remaining ingredients except rice; cook over low heat 2 to 2 1/2 hours, covered.

Serve over cooked brown rice.

Carne Guisada

This is a delicious recipe! I made it with pork chops instead of stew meat and used Swanson's canned chicken broth instead of water and used fresh garlic instead of garlic powder. It was absolutely delicious. The longer it cooks (on low heat), the better it tastes. I let it cooks for 2 hours and it was fabulous. Thank you for this recipe!
