Egg noodles and sliced garlic go in first, then unpeeled diced sweet potato joins after four minutes, and broccoli florets and quartered mushrooms get the last two minutes. Drain everything together, toss in a warm bowl with shredded mozzarella, soy sauce, thyme, and pepper, and the cheese melts into the residual heat for a sauce that doesn’t need a separate pan.
The staggered cook times are the technique to get right. Each vegetable needs different time to reach tender (sweet potato cubes the longest, broccoli and mushrooms barely two minutes), and dropping them at the right moment means everything finishes in the same minute. Skip the timing and you get either crunchy yam or sad mushy broccoli.
Leaving the yam skin on is a smart move. The peel keeps the cubes from collapsing into mush during the boil, adds fibre, and the contrast of orange flesh and brown skin looks better in the bowl. Quarter-inch slices are thin enough to cook through in eight minutes total.

Directions
In large saucepan of boiling water, add noodles and garlic.
Cook for 4 minutes.
Add yams and continue cooking for 4 minutes.
Add broccoli and mushrooms and cook for another 2 minutes or until all vegetables are tender.
Drain well. Place in bowl.
Toss with cheese, soya sauce, thyme and pepper until cheese melts.
Serve immediately.
