Ingredients

3 cups tomatoes chopped, peeled, and seeded
1 1/2 cups vegetable juice cocktail hot style
1 cup ham cubed, fully cooked
15 ounces black beans can or garbanzo beans, rinsed, drained
1/2 cup cucumber yellow summer squash, and or zucchini, chopped, seeded
1/2 cup green bell pepper or yellow, chopped
1/4 cup scallions, spring or green onions thinly sliced
2 tablespoons salad dressing, italian
1 x red hot pepper sauce (eg. Tabasco) optional

Directions

In a large mixing bowl combine tomatoes, juice, ham, beans, cucumber or squash, chopped pepper, green onion, and dressing.

Cover and chill for 2 to 24 hours.

If desired, serve with bottled hot pepper sauce.

Makes 4 main-dish servings.
