| 3 | cups | tomatoes | chopped, peeled, and seeded |
| 1 1/2 | cups | vegetable juice cocktail | hot style |
| 1 | cup | ham | cubed, fully cooked |
| 15 | ounces | black beans | can or garbanzo beans, rinsed, drained |
| 1/2 | cup | cucumber | yellow summer squash, and or zucchini, chopped, seeded |
| 1/2 | cup | green bell pepper | or yellow, chopped |
| 1/4 | cup | scallions, spring or green onions | thinly sliced |
| 2 | tablespoons | salad dressing, italian | |
| 1 | x | red hot pepper sauce (eg. Tabasco) | optional |
In a large mixing bowl combine tomatoes, juice, ham, beans, cucumber or squash, chopped pepper, green onion, and dressing.
Cover and chill for 2 to 24 hours.
If desired, serve with bottled hot pepper sauce.
Makes 4 main-dish servings.
