Ingredients

3 large eggs beaten
2/3 cup chicken broth
1/2 cup heavy whipping cream
1/2 teaspoon salt
1/4 teaspoon red hot pepper sauce (eg. Tabasco)
1/4 cup parmesan, parmigiano-reggiano cheese, grated
2 cups broccoli florets chopped
1 cup swiss cheese grated
1/4 cup scallions, spring or green onions sliced
1 x pie shell (9 inch) 9 inches, unbaked

Directions

In a bowl beat eggs with broth, cream, salt and tabasco.

Set aside.

Prick bottom and sides of pastry shell and bake at 450 degrees F for 5 minutes.

Remove from oven.

Sprinkle pastry shell with half of parmesan cheese.

Scatter half of broccoli, half of swiss cheese and half of scallions into shell.

Repeat broccoli, swiss cheese, and scallion layers.

Pour egg mixture over these ingredients and sprinkle with remaining parmesan cheese.

Bake at 450 degrees F for 10 minutes.

Reduce oven temperature to 325 degrees and bake 25 minutes longer or until knife inserted in center comes out clean.
