Honey and water come to a boil, liquid fruit pectin goes in, and one more quick boil sets the whole thing.
Pour into jelly jars, let it cool, and that’s it. No fruit, no sugar, no fuss.
The honey flavor comes through clean and bright, which means the variety of honey you choose really matters here. Clover gives a mild, classic sweetness. Wildflower adds floral complexity. Buckwheat goes dark and bold.
