| 2 1/2 | cups | barley flour | |
| 2 | teaspoons | baking powder | |
| 1/2 | teaspoon | salt | |
| 2 | large | eggs | |
| 1/4 | cup | cream | rich |
| 1/4 | cup | honey | |
| 1 | cup | buttermilk, low-fat | |
| 1 | teaspoon | vanilla extract |
Sift together the barley flour, baking powder, and salt. Beat eggs slightly. Combine eggs, cream, and honey with dry ingredients and mix well.
Pour batter into muffin tin and bake at 400 F for 25 minutes
Ingredients have been updated for better results. Mainly the addition of more liquid.

This is probably the most disappointing recipe I have ever made. I became suspicious when the directions indicated to pour the batter. The batter is like a stiff cookie dough. It made 12 small dense,and dry "muffins".
They baked into small bricks in the suggested time. I followed the recipe quantities and directions carefully. There must be an error in the recipe. The sack of barley flour I used had a recipe for barley spice muffins - that used 1c of oat flour and 1 c of barley flour. this recipe also had a much larger quantity of liquid items (2 eggs,1/4c oil, 1/2c honey, 3/4 c buttermilk, and 1 tsp vanilla).

I can't thank you enough! This is such an easy recipe. However, I think a pinch of salt might inhance the flavor a bit.
