Banana Oatmeal Cookies with Banana Frosting

Ingredients

3/4cup vegetable shortening butter flavoured
1cup brown sugar firmly packed
1each egg
1cup bananas mashed, ripe
1 3/4cups quick oats, uncooked not instant or old fashioned
1 1/2cups flour, all-purpose
1teaspoon salt
1teaspoon cinnamon
1/2teaspoon baking soda
1/4teaspoon nutmeg
1/2cup walnuts coarsely chopped
Frosting
2tablespoons vegetable shortening butter flavoured
1/4cup bananas mashed
1teaspoon lemon juice
2cups powdered sugar
1x walnuts finely chopped, optional

Directions

Heat oven to 350 F.

Grease baking sheet with Butter Flavor Crisco.

Set aside.

Cream 3/4 cup Butter Flavor Crisco and brown sugar in large bowl at medium speed of electric mixer until well blended.

Beat in egg.

Add 1 cup mashed bananas.

Mix until creamy.

Combine oats, flour, salt cinnamon, baking soda and nutmeg.

Stir into creamed mixture.

Mix in 1/2 cup nuts.

Drop 2 level measuring tablespoonfuls of dough into a mound to form each cookie.

Place 2 inches apart on baking sheet.

Bake at 350 for 15 to 17 minutes.

Cool 1 minute on baking sheet.

Remove to cooling rack.

Cool completely.

For frosting:

Cream 2 tablespoons Butter Flavor Crisco, 1/4 cup mashed bananas and lemon juice.

Add confectioners sugar.

Beat until smooth.

Frost cooled cookies.

Sprinkle with finely chopped walnuts, if desired.

Lane Cake

I am delighted to have found this recipe again. My mother always made this Lane Cake at Xmas time back in the 50's and it is undoubtedly the best fruitcake I have ever eaten. It is best made and let "ripen" a week or so before eating it. I intend to make one during this holiday season. Pat in Raleigh, NC
