| 1/2 | cup | butter | |
| 2 | heads | garlic | peeled and crushed |
| 1 | large | onion | chopped |
| 1/2 | cup | flour, all-purpose | |
| 1 | teaspoon | paprika | |
| 1/8 | teaspoon | cayenne pepper | |
| 1 | teaspoon | white pepper | |
| 1/2 | teaspoon | thyme | |
| 6 | cups | chicken broth | |
| 1 | each | lemon | half juiced, half sliced |
| 1/8 | cup | parsley leaves | fresh, chopped |
| 1 | x | croutons |
Melt butter over medium heat in 3 quart saucepan.
Add garlic and sauté until barely browned, about 3 minutes.
Remove with slotted spoon and set aside.
Add onion to pan and sauté` until tender, about 3 minutes.
Add flour, paprika, cayenne, white pepper and thyme and cook stirring constantly, 3 minutes.
Add chicken broth and bring to boil over medium-high heat stirring often.
Reduce heat to low.
Remove 1/2 c broth from pan and process in blender with reserved garlic until smooth, 2 to 3 seconds.
Return to pan.
Add lemon juice and parsley and stir well.
Simmer 10 minutes.
Serve with croutons and sliced lemon.
