| 1 | each | english muffins | raisin, split, toasted |
| 2 | teaspoons | margarine | melted |
| 2 | teaspoons | apricot preserves (jam) | heated |
| 1 | x | cinnamon | ground |
Peel banana and cut in half crosswise , cut each half in half lengthwise. Place muffins halves on broiling pan, top with 2 banana quarters, drizzle with half the margarine. Brush banana with 1/2 teaspoon apricot spread, sprinkle with cinnamon. Broil until well heated.

I have made this but substitute carnation evaporated Milk for the cream and it is wonderful, adjust cooking time until top becomes lightly golden then chill and serve, also I substitute Florida Key Lime Juice for the fresh squeezed lime much cheeper.
