Directions

Heat oven to 400℉ (200℃).

Mix flour, baking powder, baking soda and cinnamon in large bowl.

Mix cereal, milk and sugar in another bowl; let stand 5 minutes.

Stir in egg and applesauce.

Add to flour mixture; stir just until moistened. (Batter will be lumpy).

Spoon batter into muffin pan lined with foil cups, filling each cup ⅔ full.

Bake for 18 to 20 minutes or until browned.

I think the carb count on this recipe is wrong.
It should be 26 carbs per serving.

I calculated carbs for the whole recipe from the pkges of ingredients I used. wh wheat flour - 24gm in 1/4 cup so 48 gm. white fl - 22 gm in 1/4 cup so 44 gm . all bran cereal with milk is 26 gm in 1/2 cup so 104 gm. brown sugar 65 gm carbs in 1/3 cup. With just these add 48/44/104/65/24 =260 gm for just these ingredients....divide this by the number of muffins you make...I made 14, so each muffin has 18.57 gm of carbs...then added raisins and walnuts....and I did not factor in apple sauce or egg which is negligible. They were on the dry side..and they stuck to the paper cups.

made an error in calculation of carbs.....I did not add 24......so total carbs for recipe as I stated above is still correct.

Can I use this recipe for someone who suffers at times, with diverticulitis? Not allowed to eat all purpose flour.
