| 4 | slices | salmon | smoked, large |
| 20 | small | oysters | raw |
| 1 | cup | fish stock | |
| 1 | cup | wine | white |
| 1 | teaspoon | parsley leaves | |
| 1 | teaspoon | shallots | |
| 1 | tablespoon | onion | chopped |
| 1 | tablespoon | chives | |
| 4 | each | peppercorns | crushed |
| 1 | each | garlic clove | chopped |
| 2 | each | cloves, whole | |
| 3/4 | cup | cream | or cream sauce |
| 2 | tablespoons | tomato paste | |
| 4 | large | mushrooms | caps |
| 1/3 | cup | swiss cheese | grated |
Rinse salmon slices in hot water, drain and dry.
At end of each slice place 5 oysters then roll salmon over them.
Arrange rolls on a shallow, greased baking pan.
In a saucepan combine wine, stock, parsley, shallots, onion, pepper- corns, garlic and cloves.
Bring to a boil then simmer until sauce is reduced to 1/2 cup.
Strain sauce into another pan then add cream or cream sauce and tomato paste.
Bring this to a boil then remove from heat.
Saute musroom caps in butter until done then place on each salmon roll.
Pour sauce over salmon rolls, sprinkle with grated swiss cheese and broil until cheese melts.
Serve immediately.

This is a family favorite. Instead of loaves of bread I use Rhodes Dinner rolls (24) I cut each roll in half and roll it in dry pudding mix. The COOK and SERVE pudding works the best. I melt the brown sugar and butter together and pour over the top. I also use a bundt pan it looks beautiful served on a platter. YUM! Thanks for sharing.
