When I was young an older friend of the family, either Polish or German, I believe, used to make this casserole for us. He always called it spotzen(not sure of the spelling)made with homemade noodles, saurkraut and shredded or cut up pork roast. I can still remember the wonderful taste of this casserole and feel sad that my family never actually learned how to make it. Our friend never had a written recipe for this and it was just passed on from older family members to them.
I have looked for this recipe for years and even with the internet, had no luck in finding it.
I am hoping maybe someone can help me, I sure would appreciate it.
PORK WITH SAUERKRAUT AND SPAETZLE (SPATZEN)

2 lb. pork shoulder or pork
spareribs
1/2 tsp. salt
1/4 tsp. black pepper
1 1/2 to 2 c. water
3 c. sauerkraut
Place meat in heavy saucepan or Dutch oven. Add salt,
pepper and enough water to barely cover meat. Cover. Bring to
a boil and simmer for 30 to 45 minutes. Drain sauerkraut.
Arrange sauerkraut over meat. Cover. Simmer for about 1 1/2
to 2 hours until meat is tender. During the last half hour of
cooking time of pork and sauerkraut, prepare and cook spaetzle.
Serve pork on a platter with sauerkraut dish as a side dish.
Serves 6 to 8.

Ingredients 1 Ige. onion
Margarine
3 tbsp. paprika
2 lb. lean boneless pork
3/4 c. rice
1 No. 2 1/2 can sauerkraut
1/2 pt. sour cream
Milk
How to make Sauerkraut-Pork CasseroleCut onion into small cubes; saute in margarine in frypan until transparent.
Add paprika; stir well.
Cut pork into 1-inch cubes; add to onion.
Saute until browned.
Add eiough water to completely cover pork mixture.
Simmer, covered, for 35 to 45 minutes or until tender.
Cook rice according to package directions.
Wash sauerkraut in strainer; drain thoroughly.
Saute in margarine for several minutes.
Place half the sauerkraut in 2-quart casserole.
Spread rice over sauerkraut; top with pork mixture.
Cover with remaining sauerkrciut.
Pour pan drippings over layers.
Dilute sour crearr.
with milk; spread over top.
Bake at 350 degrees for 45 to 60 minutes.
Broil for several minutes to brown top.
May be prepared ahead and refrigerated before adding sour cream.
