During the fall and winter I make homemade soup once a week. I’ve got dozens of delicious soup recipes, but the Pizza Soup was the favorite of our sons, Keith and Mark. It’s really easy to make. I apologize for the inexact quantities, but this is another recipe that I’ve never written down…and haven’t made it since last winter! I’ve given the basic recipe, but don’t be afraid to add other items you enjoy on your pizza…including a dash of red pepper sauce!
Definitely deserves 5 star. This was our dinner yesterday, I only made half of the recipe, so I actually roasted the cauliflower and garlic in the small toaster oven. It did take a bit longer, but the result was great. I also added some freshly grated lemon zest, very good.
Cheesy polenta topped with eggs and a bit of Italian or Turkey sausage, perfect for a Sunday brunch. Any cheese could be used but my favorite is Fontina or an old flavor filled cheddar. Similar to sausage, eggs and potato but much healthier with perfect matching of flavors. Very easy to halve the recipe along with pictures.
These cute and fresh baby peppers are stuffed with a mixture of ricotta cheese, toasted walnuts, sun-dried tomatoes, basil pesto and black olives. Roast them in the oven, they come out cheesy, oozy and absolutely tasty. Serve these cute yet yummy peppers as an appetizer that everyone will love and enjoy.
A hearty vegetarian version of my favorite soup. It's easy to make it vegetarian by using roasted vegetable stock instead of beef stock. By adding a leftover parmesan rind (I save them in the freezer for this soup) it adds extra flavor. (optional)
I roasted cauliflower with 1 each sliced yellow and red onions, which came out delicious with the nice caramelization. The tomato sauce was so flavorful, olives added some depth. I used parmesan cheese, and it enhanced the overall flavor.
Without pancetta or prosciutto, these small treats are still very yummy, with some balsamic glaze drizzling on top. Everyone wants some extra ones.
Sauteed mushroom and Swiss chard with layered mashed potatoes, sprinkle grated Parmesan cheese on top, after baking the flavor is wonderful. It is also a good dish for holidays.
Tasty vegetable and lentil base topped with mashed potato. Lovely healthy comfort food for a winter night :D Note: though the list of ingredients can at first be daunting, dont be put off. Most are just seasoning that can be added at your own pace.
Absolutely delicious. We made this recipe for Mother's Day, and everyone raved about how yummy it was. Roasted vegetables added tons of flavor, plus the outer layer was so crispy. Definitely a winner!

Stuffed with two kinds of cheese these make spectacular dinner roll.
Oven-roasted cherry tomato and garlic make this delicious dip absolutely addictive. Sweet, tangy and garlicky. You can dip some crunchy vegetables into it, spread it over the toast or toss it with some pasta. Heirloom or vine-ripe tomatoes work well too.
Use zucchini slices to replace lasagna noodles, which reduces lots of calories and carbohydrate, but it still tastes cheesy and flavorful. A great recipe to cook some seasonal zucchinis into a light yet delicious meal.
