30 minThree ingredients, no added sugar, no dairy, and it tastes like strawberry soft serve. Frozen bananas and strawberries blended with crushed pineapple and its juice create a creamy, scoopable frozen dessert that comes together in the blender in minutes.
The frozen bananas are the secret to the texture. When blended, they turn thick and creamy in a way that mimics ice cream without a single drop of cream. The pineapple juice provides enough liquid to get the blender moving, and the crushed pineapple adds little pockets of tropical flavor throughout.
Add the frozen fruit gradually, blending between each addition. Dumping it all in at once will jam the blender and leave you with chunks instead of a smooth, uniform texture. Let the pineapple juice do the work of pulling the frozen pieces into the blade.
A brief 15-to-30-minute freeze after portioning firms everything up to a perfect scoopable texture. Skip this and it’s more like a smoothie bowl. Freeze too long and it turns rock-hard. If that happens, just pull it out a few minutes early and let it soften.
Kitchen Tips
- Peel and break bananas into chunks before freezing. Whole frozen bananas are impossible to blend smoothly.
- Use a high-powered blender if you have one. A standard blender works but may need more pineapple juice to get going.
- Serve immediately after the short freeze for the best soft-serve texture.
Variations
- Swap strawberries for frozen peaches or mango for a tropical twist.
- Add a tablespoon of cocoa powder for a chocolate-strawberry frozen dessert.
- Stir in a handful of mini chocolate chips after blending for a stracciatella-style treat.
