Sweetened ricotta and chocolate make the perfect South Beach Diet Phase 1 dessert.

Ingredients

½ cup ricotta cheese
part-skim
1 teaspoon cocoa powder
unsweetened
¼ teaspoon vanilla extract
1 each sugar substitute
packet (I use Splenda)

1 dash instant coffee, espresso
powder, or ground cinnamon

5 each mini chocolate chips
or coarsely chopped chocolate

Directions

Process the ricotta if the texture is too coarse.

Mix together the ricotta, cocoa powder, vanilla extract and sugar substitute. Place in serving cup; chill.

Serve chilled and dusted with espresso powder or ground cinnamon and sprinkled with the chocolate chips.
