This is a recipe that was given to me by my mentor when I was student teaching. I love this soup because it is so simple and delish but still healthy.

Ingredients

3 Tbsp olive oil
4-5 gloves garlic minced
1 c onion chopped
1 Tbsp salt
1 c celery chopped
1 c carrots chopped
1 c broccoli chopped
1 c spinach chopped
1/4 tsp pepper
1 tsp dried basil
1 c green pepper chopped
1 tsp oregano
3 1/2 c water
2 c low sodium tomato puree
1 c canned tomatoes chopped
1 1/2 c chick peas
1/2 c dry pasta
1/2 c parmesan cheese

Ingredients

3 Tbsp olive oil

1 c carrots chopped
1 c broccoli chopped
1 c spinach chopped
1/4 tsp pepper
1 tsp dried basil
1 c green pepper chopped
1 tsp oregano
3 1/2 c water
2 c low sodium tomato puree
1 c canned tomatoes chopped
1 1/2 c chick peas
1/2 c dry pasta
1/2 c parmesan cheese

Directions

  1. Heat oil in a large pot. Add garlic and onion and sauté until onions are translucent.
  2. Stir in salt, celery, carrots, broccoli and spinach
  3. Add oregano, peppers and basil.
  4. Cover and cook 5 to 8 minutes
  5. Add green peppers, tomato purée, tomatoes, and chick peas, pasta and water.
  6. Simmer at least 30 minutes (med to low heat)
  7. Add parmesan cheese and serve.
