Longevity Soup
This is a recipe that was given to me by my mentor when I was student teaching. I love this soup because it is so simple and delish but still healthy.

3 Tbsp olive oil
4-5 gloves garlic minced
1 c onion chopped
1 Tbsp salt
1 c celery chopped
1 c carrots chopped
1 c broccoli chopped
1 c spinach chopped
1/4 tsp pepper
1 tsp dried basil
1 c green pepper chopped
1 tsp oregano
3 1/2 c water
2 c low sodium tomato puree
1 c canned tomatoes chopped
1 1/2 c chick peas
1/2 c dry pasta
1/2 c parmesan cheese
Ingredients

1 c spinach chopped
1/4 tsp pepper
1 tsp dried basil
1 c green pepper chopped
1 tsp oregano
3 1/2 c water
2 c low sodium tomato puree
1 c canned tomatoes chopped
1 1/2 c chick peas
1/2 c dry pasta
1/2 c parmesan cheese
Directions
- Heat oil in a large pot. Add garlic and onion and sauté until onions are translucent.
- Stir in salt, celery, carrots, broccoli and spinach
- Add oregano, peppers and basil.
- Cover and cook 5 to 8 minutes
- Add green peppers, tomato purée, tomatoes, and chick peas, pasta and water.
- Simmer at least 30 minutes (med to low heat)
- Add parmesan cheese and serve.
