Directions
Prepare the beef rib marinade
Remove any membrane from the back of the beef ribs. Depending on the size of your rib rack, divide them into sections to fit your marinating and braising container.
Marinate the ribs, rotating with tongs every 2 or 3 hours, or give them an occasional massage, if using a bag, in the refrigerator for 6 to 12 hours.
Once the ribs have finished marinating, transfer the ribs and all of the marinating liquid into an Instant Pot, pressure cooker, or braising baking dish .
Instant Pot
Choose the ribs setting on your Instant Pot or high-pressure mode set for 25 minutes and press start. Allow to naturally vent for about 20 minutes before releasing any pressure (if any).
Oven braising
Tightly cover the ribs with 2 or 3 layers of aluminum foil. Bake at 300F until a skewer inserted into the meaty area between the bones meets little resistance, 2½ to 2¾ hours.
Oven broiling
Preheat your oven broiler at a high setting.
Carefully transfer the ribs from the braising liquid, draining and blotting to dry if needed to a broiler save pan or baking sheet.
Brush the ribs thoroughly with a barbecue sauce of your choice.
Broil the ribs until the barbecue sauce glaze begins to char, about 2 minutes. Remove from the oven, brush on the more barbecue sauce, then broil until lightly charred, another 3 to 5 minutes.
Repeat as desired to build up a bark that is to your satisfaction.
Remove from the oven and let rest for about 10 minutes or so if you can wait that long.
Transfer the beef ribs to a cutting board. Separate by slicing between the bones, then transfer to a serving platter or rustic board.
Grilling
Alternatively, grill the ribs, brushing with barbecue sauce of your choice until glazed to your preferred level.
