Directions
Prepare the garlic scapes by trimming off the fibrous top, just above the bulbous part and trim off the bottom slightly; see photo. Slice the trimmed garlic scapes into 1 inch (2 cm) pieces.
Add the garlic scapes to a food processor with the lemon juice, salt, and black pepper. Process until finely chopped, pulsing and scraping sides as needed; about one minute.
Add the beans and pulse until you achieve a rough puree. With the food processor running, drizzle in the olive oil + 2 or 3 tablespoons of water until fairly smooth.
Taste and adjust seasoning with additional salt, black pepper, and lemon juice.
Makes about 1 ½ cups of dip.
Serving Garlic Scape Dip
Transfer to a shallow bowl, spreading out attractively and drizzle with olive oil, and sprinkle with a bit of flaky sea salt and a fresh grind or two of black pepper.
Serve with tortilla chips, crudites (carrot/celery sticks, etc.), bread, crisps or crackers or other suitable dippers.
