A buckle is what happens when a simple cake batter, fresh fruit, and a crumb topping bake together in one pan. The topping sinks unevenly into the batter as it bakes, giving it that characteristic crinkled, buckled surface.

This version keeps it genuinely simple: cream shortening and sugar, add egg and alternating flour and milk, pour into an 8-inch pan, scatter your fruit of choice on top, add the crumb topping, and bake.

Use whatever fruit is in season. Blueberries, peaches, and cherries are the classic choices, but this batter is forgiving enough to handle most stone fruits or berries.
