Fruit buckle with a simple cream-and-egg batter, any fresh fruit you have on hand, and a crumb topping. An old-fashioned single-layer dessert ready in 25 minutes.

25 minA buckle is what happens when a simple cake batter, fresh fruit, and a crumb topping bake together in one pan. The topping sinks unevenly into the batter as it bakes, giving it that characteristic crinkled, buckled surface.
This version keeps it genuinely simple: cream shortening and sugar, add egg and alternating flour and milk, pour into an 8-inch pan, scatter your fruit of choice on top, add the crumb topping, and bake.
Use whatever fruit is in season. Blueberries, peaches, and cherries are the classic choices, but this batter is forgiving enough to handle most stone fruits or berries.

Cream together shortening and sugar.
Add 1 beaten egg, then sift flour, baking powder, and salt to mix.
Add flour mixture, alternating with ¼ cup milk to the egg mixture.
Pour into greased 8 inch pan. Spread fruit on top and sprinkle with crumb topping.
