This quick and easy salad is light and refreshing, it is a great side dish with any main dish.

Ingredients

¼ cup rice vinegar
1 tablespoon sesame oil
toasted
2 teaspoons sugar
2 teaspoons dijon mustard
¼ teaspoon salt
6 cups bok choy
very thinly sliced (about a 1-pound head, trimmed)

2 medium carrots
shredded
2 each scallions, spring or green onions
very thinly sliced

Directions

Whisk vinegar, oil, sugar, mustard and salt in a large bowl until the sugar dissolves.

Toss bok choy, carrots and scallions coat with the dressing.
