A tasty side dish that can go with any meal you enjoy this summer!

vegetable, or chicken stock

or curry, garlic or Mrs. Dash *

Directions

Bring stock, onion & zucchini to a boil, simmer 15 or 20 minutes. Add couscous. Turn off heat. Let stand 5 or 10 minutes.

Serves 2 as main dish or 4 to 6 as side dish.

Notes: this is pretty basic, use your favorite veggies, mushrooms, carrots, green beans, anything. You can’t go wrong. Quick and easy.
