Bubble and squeak is a traditional British dish that is made from leftover mashed potatoes and cabbage. It's a delicious way to repurpose your Christmas dinner leftovers!

The name comes from the sounds the ingredients make while they're being fried in the pan.

Some people like to add other veggies, like carrots or Brussels sprouts, to the mix.

It's typically served as a breakfast dish, but it can also make a great side or even a meal in itself.

Directions

Heat butter in large skillet and fry onion over low heat for 5 min or until softened.

Add cabbage (should be boiled for 15 minutes previously) and stir over low heat for 2 min.

Fold in mashed potatoes until well blended.

Press mixture lightly with back of spoon to form large pancake.

Cook for 5 min until browned lightly.

Turn and brown 2nd side 5 min.
