Think of these as homemade ice cream sandwiches, but way easier and friendlier on blood sugar.

Sugar-free chocolate pudding gets mixed with peanut butter, spooned onto graham crackers, topped with a swirl of light whipped topping, and frozen solid.

Pull one out whenever a craving hits. The peanut butter keeps them from freezing rock-hard, so they stay scoopable and creamy.

This recipe makes 3 dozen, so you’ll have a stash in the freezer for weeks.

Pro Tips

  • Let the pudding cool completely before mixing in the peanut butter, or the texture gets thin and runny.

Directions

Mix chocolate pudding according to directions on package using nonfat milk.

Cool thoroughly. Mix peanut butter with pudding. Drop 1Tbsp. onto 1 square graham gracker.

Place low-calorie whipped topping on top of pudding mixture, cover with second graham cracker square.

Freeze until ready to use.
