This braised onion sauce is rich and buttery, so you don’t need much when tossing it with pasta.

TABLESPOON ML SUGAR

peeled, sliced

CUP ML MADEIRA WINE *

Directions

Sauté onions in butter.

Stir in sugar, lower heat and cook very slowly one hour.

Stir in the wine, cook briefly, and pour over a pound of freshly cooked pasta.

Pass the Parmesan.
