15 minThese simple sesame noodles rely on toasted sesame seeds for their signature nutty crunch and aromatic oils that cling to every strand.
Mixing the noodles by hand ensures the sauce coats evenly without breaking the pasta.
Serve them warm as a side to stir-fries, or chilled as a make-ahead lunch that only gets better after a few hours in the fridge.
Kitchen Tips
- Toast your own sesame seeds: Dry-toast them in a skillet over medium heat until golden and fragrant; the fresh-toasted flavor is far superior to pre-toasted seeds.
- Use your hands: Tossing the noodles with your hands (clean, of course) distributes the oil mixture more evenly than spoons or tongs.
- Customize the heat: Start with a pinch of red pepper flakes and increase to your preference; the sesame oil will amplify whatever spice level you choose.
