Directions

Preheat your air fryer to 400℉ (200℃)

Prep your potatoes, cutting them into 1 1/2" (3 to 4cm) chunks. Leave the skin on if you wish, or peel if desired.

Add the oil, thyme, cornstarch, if using, and salt, and mix in a large bowl until combined. Add potato chunks and toss until thoroughly coated.

Add to your air-fryer set to approximately 400℉ (200℃) and roast/fry for 20 minutes shaking the basket every 5 minutes or so to help ensure even browning.

Taste and adjust seasoning as desired with additional salt to taste.
