A Dutch home-kitchen standby that turns canned knakworst (small, German-style smoked sausages that fill a specific place in Dutch and Belgian pantries) into a proper supper. Sliced leeks, onion, and ground ginger share the skillet with the sausage rounds, and apple juice and vinegar get added at the end to build a quick sweet-tangy pan sauce.

Leeks are the star produce here. Slice them diagonally into bite-size pieces, then wash aggressively. Leeks hide grit deep in their layers, and nothing ruins this dish faster than sandy leeks. Diagonal slices hold their shape better through the short cook and catch more of the sauce than straight rounds.

The apple juice and vinegar combination is the clever finishing move. Apple juice brings that soft fruit sweetness Dutch cooking leans on (think appelstroop, apple gravy, and the countless apple-based sides that partner with pork). Directions

Remove the ugly leaves and roots from leeks.

Slice diagonally into 2 cm pieces; wash and drain.

Slice the knakworstjes into 3 cm pieces.

Melt butter in a frying pan.

Add onion and cook about 2 minutes.

Stir in leeks, ginger, cook about 1 minute.

Stir in knakworstjes; cook about 2 minutes.

Stir in apple juice and vinegar, cover, and cook about 5 minutes, until leeks and knakworstjes are cooked.

Divide over two plates.
