| 1 | cup | onion | finely minced |
| 1 | teaspoon | sage | |
| 2 | teaspoons | garlic | finely minced |

| 3 | tablespoons | butter | |
| 1 | teaspoon | oregano | |
| 3 | tablespoons | olive oil | |
| 1 | pint | heavy whipping cream | |
| 1 | teaspoon | thyme leaves | |
| 1 | x | pasta, fresh | pasta of your choice, cooked, hot |
Heat a very large skillet, melt butter and oil and sauté onion and garlic until translucent. Add sausage meat and spices to the onion mixture and cook on moderate heat for 10 to 15 minutes, or until the sausage is completely cooked. Add the cream and reduce by one-third. This should take about 5 minutes on moderate heat. Stir very frequently to insure it doesn't stick or burn. Taste, adjust seasoning with salt and pepper and whatever else you want to add. Pour over hot pasta and serve.
