Ingredients

2 large eggs
1 cup applesauce
2 teaspoons vanilla extract
1 1/2 cups sugar
2 cups zucchini grated
1 small banana soft, mashed
2 cups flour, all-purpose
1 cup whole wheat flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon cinnamon
3/4 teaspoon salt
1 cup nuts chopped
1/2 cup golden raisins
1/2 cup raisins, seedless dark

Directions

Beat eggs.

Add the applesauce, vanilla, sugar, zucchini and banana.

Mix together well and add remaining ingredients.

Pour into 2 greased and floured loaf pans (approx. 3 x 9 x 3 inches deep).

Preheat oven to 350 degrees F and bake for 45 minutes to 1 hour, or until toothpick inserted in center comes out clean.

Makes two loaves.
