| 20 | medium | shrimp | peeled, deveined |
| Cajun coating mix | |||
| 1 | each | orange | |
| 2 | each | limes | |
| 1 | each | lemon | |
| 1/3 | cup | dijon mustard | |
| 1 | teaspoon | red hot pepper sauce (eg. Tabasco) | |
| 1 | teaspoon | garlic | chopped |
| 1 | teaspoon | worcestershire sauce | |
| 3 | tablespoons | jerk seasoning | |
| 1/4 | cup | paprika | |
| 1/2 | teaspoon | black pepper | |
| 1/2 | teaspoon | cayenne pepper | |
| 1 | teaspoon | cider vinegar | |
| 1/4 | cup | olive oil | |
Make the Cajun coating mix by combining the above ingredients.
Mix well in a bowl. Preheat grill. Dip shrimp into the Cajun mix to coat evenly.
Place on hot grill and blacken each side (5 to 8 minutes=
TOTAL grilling time).
Enjoy hot or cold with lemon.
Tried this recipe last weekend for football snacks and the guys comments were: TOP SHELF, NUMBER ONE, CAN'T GET NO BETTER, MO' SHRIMP NEXT WEEK etc...
Great flavors. Would recommend to the President and Queen of England.
