| 1 | pound | smoked link sausage | cut into 1/2 inch slices |
| 1 | medium | onion | chopped |
| 1 | each | green bell pepper | chopped |
| 1 | clove | garlic | miced |
| 30 | ounces | kidney beans | canned, drained |
| 16 | oz | tomatoes, canned | chopped, with juice |
| 1/2 | teaspoon | oregano leaves | dried |
| 1/2 | teaspoon | black pepper | |
| 1 | x | rice | cooked, hot |
Cook sausage over low heat 5-8 mins.
Add onion, green pepper, and garlic; sauté until tender.
Drain if necessary.
Add beans, tomatoes, and seasonings; simmer, uncovered, 20 mins.
Serve over rice.
