| Cornmeal crust | |||
| 1/2 | cup | cornmeal | |
| 3/4 | cup | flour, all-purpose | sifted |
| 1/2 | teaspoon | salt | |
| 1/8 | teaspoon | black pepper | |
| 1/3 | cup | vegetable shortening | |
| 4 | tablespoons | water | or more, cold |
| Filling | |||
| 6 | slices | monterey jack cheese | |
| 1/2 | pound | chorizo sausage | casings removed |
| 1/4 | cup | scallions, spring or green onions | sliced |
| 4 | large | eggs | |
| 2 | cups | heavy whipping cream | or half and half |
| 1 | x | salt and black pepper | |
To make crust, sift together cornmeal, flour, 1/2 teaspoon salt and pepper.
Cut in shortening until mixture resembles coarse crumbs.
Add water, 1 tablespoon at a time, stirring lightly until mixture forms ball.
Turn out onto lightly floured board and roll dough to 13-inch circle.
Fit loosely into 9-inch pie plate or quiche pan.
Fold edge under and flute.
Arrange cheese slices on bottom of crust.
Fry sausage until cooked and crumbly.
Drain off fat.
Sprinkle sausage on top of cheese, then top with green onions.
Lightly beat eggs in bowl, stir in whipping cream and season to taste with salt and pepper.
Pour over cheese and chorizo mixture.
Place on bottom rack of oven and bake at 450F 15 minutes.
Reduce heat to 350F and bake additional 25 to 30 minutes.
Let stand 10 minutes before cutting.

I have never had a quiche recipe work for me. They always end up a soupy mess and leave me frustrated and dejected. This one turned out so wonderfully and gorgeous - pretty enough for company. It tasted fantastic. I used a quiche pan instead of a 9" pie pan(as I said I never had one turn out, but it doesn't stop me from trying) ;-) If you like chorizo and want to try a quiche recipe that is totally fool proof - THIS IS THE ONE!!! Yummy!!! I'd give it 10 stars if I could.

RecipeLand.com kitchens here: These are one of our favorites. A great company dish while entertaining. We use the ready-made egg roll wraps from the supermarket to save time. If you find the number of spices on the list intimidating have no fear. Simply use a tablespoon or so of all-purpose curry powder to replace the long list of spices. We make these regularily to freeze and re-heat. They freeze extremely well and microwave or even better oven reheating is a snap. There are many variations to this recipe on the site. Just search for 'samosa'. Serve with an Apple Ginger or other Fruit Chutney or eggroll (Plum) sauce.
