If tofu in dessert sounds suspicious, this pudding is about to change your mind. Silken tofu is the stealth ingredient that turns melted chocolate chips into a glossy, rich, silky pudding with no dairy, no eggs, and no hours of stirring over a double boiler. Food processor, four ingredients, done.

Silken tofu has a texture closer to custard than firm tofu. When blended with melted chocolate, it disappears entirely into the mixture, leaving only a creamy, velvety texture that can fool anyone who isn’t told what’s in the bowl. The tofu adds protein and body without announcing itself on the palate.

The pinch of nutmeg is the detail that makes this pudding taste “made” rather than just assembled. Just a whisper, not a full grating. Nutmeg amplifies chocolate in a subtle, mysterious way that most people can’t identify but always notice is missing.

Kitchen Tips

  • Use firm silken tofu, not regular firm tofu. The difference is huge. Silken is smooth and custardy; regular firm has a grainy bean texture that never blends out.

Directions

Melt the chocolate chips in a small saucepan or double boiler with a tablespoon of water over medium heat.

Enjoy the earthy-looking darkness.

Transfer the melted chocolate to the container of a food processor fitted with a steel blade.

Add the bright white tofu and process until smooth.

Add the brown sugar, honey, or rice syrup to taste, and sprinkle in the nutmeg.

Process again until velvety smooth.

Stir in the little sun-like rounds of sliced banana, if desired.

Divide the pudding among 6 dessert cups and chill until needed.
