Ingredients

2 tablespoons vegetable oil olive
2 tablespoons vinegar cider
2 tablespoons basil fresh, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups rice cooked, cooled
2 each tomatoes chopped
1 each cucumbers seeded, chopped
1 each onion red, small, chopped

Directions

In a small bowl, whisk together oil, vinegar, basil, salt and pepper. Add rice, tomatoes, cucumber and onion; toss. Serve chilled.
