Beef tenderloin steaks rubbed with a smoky brown sugar, paprika, and allspice blend then grilled to medium-rare in just 6 minutes. This 20-minute date night dinner for two is pure steakhouse class at home.

Sometimes the best steak dinner is the simplest one.

A five-ingredient spice rub is all you need: brown sugar for caramelization, sweet paprika for color, dry mustard for bite, allspice for warmth, and black pepper for heat.

Press it generously into both sides of thick-cut tenderloin steaks and hit the grill on high.

Three minutes per side for medium-rare gives you a dark, crusty exterior with a pink, buttery center.

Mix the spice blend up to a week ahead and keep it in the pantry so a steakhouse-quality dinner is always just minutes away.

Chef Tips

  • Let the steaks come to room temperature for 20 minutes before grilling for more even cooking
  • Press the rub in firmly with your hands; tenderloin’s smooth surface needs help holding onto the spices
  • Rest the steaks 5 minutes after grilling so the juices redistribute
  • Pair with a simple green salad and a glass of bold red wine
