1 hrsThis applesauce cake swaps wheat flour entirely for ground rolled oats, making it a solid option for anyone avoiding wheat. The ground oats give the cake a slightly denser, heartier crumb than white flour would, with a natural nuttiness that pairs beautifully with the warm spices and applesauce.
Applesauce pulls double duty here. It adds moisture so the cake stays tender despite the denser oat flour, and it brings a natural apple sweetness that means you need less sugar overall. The baking soda reacts with the applesauce’s natural acidity to provide lift, so there’s no baking powder needed.
The instruction to store the cake covered for a full day before serving isn’t optional. Oat-based cakes need time for the ground oats to fully absorb moisture and soften. Fresh out of the oven, the texture is a bit grainy. After a day of rest, it transforms into something tender and cohesive.
Pro Tips
- Grind the oats in a blender or food processor until they resemble coarse flour. A few larger flakes are fine, but big chunks will make the cake crumbly.
- Beat the batter for the full 2 minutes. The extra beating develops what little protein the oats have and creates a smoother texture.
- Use sweetened applesauce, not unsweetened. The recipe’s sugar level accounts for the extra sweetness already in the sauce.
- Check for doneness at 35 minutes with a toothpick. Oat cakes can dry out quickly if overbaked.
Variations
- Add chopped walnuts or pecans for crunch and richness.
- Fold in diced fresh apple pieces along with the applesauce for bursts of fruit in every bite.
- Dust the cooled cake with powdered sugar or drizzle with a simple vanilla glaze.
