Chewy oatmeal cookies loaded with crushed pineapple, warm cinnamon, and nutmeg. A one-bowl, drop cookie recipe that’s ready in 25 minutes. Simple baking with a fruity tropical twist.

Take everything you love about a chewy oatmeal cookie and throw in a handful of crushed pineapple. That’s the whole move, and it works.

The pineapple keeps these cookies soft and moist on the inside while the edges get that golden, slightly crispy thing going on. Cinnamon and nutmeg bring the warmth, chopped nuts add the crunch.

One bowl. Mix, drop, bake. You’ll have a dozen warm cookies cooling on the rack in under half an hour.

Chef Tips

  • Drain the crushed pineapple well and give it a squeeze. Too much juice makes the dough too wet and the cookies will spread flat.
  • Use a cookie scoop for even sizing so they all bake at the same rate.
  • Let them cool on the baking sheet for a few minutes before moving to the rack. They firm up as they rest.

Directions

Mix all together well.

Drop by teaspoonfuls onto ungreased baking sheet.
