30 minSeven ingredients and 30 minutes. These beets get simmered in a spiced vinegar bath that’s sharp, aromatic, and surprisingly complex for how little goes into it.
White wine vinegar, water, a bay leaf, a single whole clove, and black pepper create a pickling-style liquid that infuses the sliced beets as they cook. The clove is the quiet star here. Just one whole clove adds a warm, slightly sweet spice note that softens the vinegar’s bite without masking it.
Sugar substitute keeps this diabetic-friendly while still balancing the tartness. The beets bring their own earthy sweetness to the table, which gets amplified by the warm spices during the 10-minute simmer.
Both stovetop and microwave methods are included, and the microwave version cuts the time significantly. Either way, you’re looking at a hands-off side dish that pairs well with roasted meats, grilled fish, or mixed into a salad.

- Use pre-cooked or canned sliced beets for the fastest version. Raw beets will need longer simmering to get tender
- Remove the bay leaf and whole clove before serving. They’ve done their work in the liquid
- These taste even better chilled overnight. The vinegar flavor deepens and the beets absorb more of the spice
- Serve warm as a side dish or cold as a pickled beet salad

Directions
Combine all ingredients except beets in a small saucepan.
Bring to a boil over high heat. Add beets; bring to a simmer and reduce heat.
Simmer for 10 minutes, or until tender.
Microwave: Combine all ingredients, except beets.
Cook on High for 2 minutes.
Add beets. Cook on Medium for 2 minutes.
