Ingredients

1-1/2 lbs turkey sausage or turkey kielbasa, smoked, sliced 1/8 inch thickness
3/4 cup salad dressing, italian
6 cups lettuce torn
8 leaves romaine lettuce torn
3 each tomatoes cut into wedges
1 each cucumber sliced
1 each carrot peeled, sliced
1 cup cauliflower florets pieces
3 ounces black olives
4 ounces feta cheese crumbled
4 each scallions, spring or green onions sliced

Directions

Brown sausage until cooked through.

Drain well on paper towel.

Arrange lettuce leaves on serving dish, place sausage on top.

Add Feta cheese.

Pour dressing over salad and serve.

Total preparation and cooking time: 15-20 minutes.

Pumpkin Oat Bran Muffins

These are great heated with margarine! Cinnamon may be substituted for pumpkin pie spice. Bake these muffins at around 375-400 if you have a hot oven like I do, and only bake for 15-20 minutes. Great recipe!
